Seale to demonstrate Crawfish Bisque at Prairie Acadian Cultural Center

A lineup of chefs has been scheduled on Saturdays at the Jean Lafitte National Historical Park and Preserve’s Prairie Acadian Cultural Center for free foodways cooking demonstrations.
The 4 p.m. programs feature guest chefs, professional and great home cooks, to demonstrate their Cajun and Creole culinary skills. Visitors will enjoy samples and receive a copy of the day’s recipe.
The center is located at 250 W. Park Ave., Eunice.

—     May 14: Charles Seale cooking a Crawfish Bisque.
—     May 21: Randy Fontenot - beef, chicken, and sausage sauce piquant avec choucroute.
—     May 28: Phillip Hargroder - fricasse de boulette (meatball stew).
—     June 4: John Reed - etouffee des ecrevisses (crawfish etoufee).
—      June 11: Johnny Laine Carriere Jr. from Prayer House Coffee - coffee roasting and brewing.
—      June 18: Jay Mentel - pecan pralines.
—      June 25: Casey Jo Lacombe – red beans and rice with Cajun smoked sausage.
The Prairie Acadian Cultural Center is managed by the National Park Service as part of Jean Lafitte National Historical Park and Preserve. The center features exhibits interpreting the culture of the Acadians who settled the prairies of southwest Louisiana. Special programs every Saturday include Explore & Restore craft workshops for kids from 10 a.m. to noon; and Cajun Conversations to learn and practice conversational Cajun French from 1 to 2:30 p.m. Saturday programs include music and dancing beginning at 2:45 p.m. and a cooking demonstration beginning at 4 p.m. The center is open 9:30 a.m. to 4:30 p.m. Wednesday through Friday and Saturday 9:30 a.m. to 6 p.m. The center is closed on all federal holidays but open on Mardi Gras. Admission to the Prairie Acadian Cultural Center is free and all activities and demonstrations are free and open to the public.
