Willie Burson, of the Eunice Superette, and Candace Reeves, event coordinator for the city, surveyed the hogs at Eunice Superette on Friday as a way to call attention to the fact the Old Time Boucherie is scheduled at 9:30 a.m. Feb. 7 at Walnut and 2nd streets. The Eunice Superette is donating the hog for the event, which includes selling backbone stew, fresh sausage and boudin. Burson said the Cajun French Music Association plans to sell hog head cheese and cracklins. The Eunice Professional Firefighters Association is scheduled to sell barbecued pork steaks, Reeves said. Up to 7,000 people will gather in downtown Eunice on Mardi Gras for the main party, but Eunice’s celebration begins at 6:30 p.m. Wednesday with a Taster’s Choice event at the LSUE Acadian Center.
