Eunice Mardi Gras schedule
Maybe call the pig in the photo “Marty” the Eunice Mardi Gras hog because the hog or another one from Eunice Superette is coming to the Eunice Mardi Gras. Willie Burson, of the Eunice Superette, and Candace Reeves, event coordinator for the city, surveyed the hogs at Eunice Superette on Friday as a way to call attention to the fact the Old Time Boucherie is scheduled at 9:30 a.m. Feb. 7 at Walnut and 2nd streets. The Eunice Superette is donating the hog for the event, which includes selling backbone stew, fresh sausage and boudin. Burson said the Cajun French Music Association plans to sell hog head cheese and cracklins. The Eunice Professional Firefighters Association is scheduled to sell barbecued pork steaks, Reeves said. Up to 7,000 people will gather in downtown Eunice on Mardi Gras for the main party, but Eunice’s celebration begins at 6:30 p.m. Wednesday with a Taster’s Choice event at the LSUE Acadian Center.
The culinary event includes several chefs in which a panel of judges will select winners in amateur and professional categories, live music, a cash bar, and a silent and live auction. Geno Delafose is providing the entertainment. The event is a fundraiser for the Eunice Community Health Clinic.
